60 g caster sugar
60 g unsalted butter, melted
60 g plain flour
1/2 teaspoon baking powder, sifted with plain flour 2 large eggs (at room temperature)
1 teaspoon vanilla or orange blossom water*
Preheat oven 180°C.
Grease and flour a madeleine mould.
Using an electric mixer, beat sugar, eggs and vanilla until thick.
Fold sifted flour and baking powder into mixture.
Fold in melted butter with a large serving spoon . *Add orange blossom water here if desired.
Pour into prepared moulds. Do not overfill.
Bake for 10-12 minutes.
Remove from oven.
Invert the moulds onto cake rack.
Store in an airtight container.
It is worth investing in a shell-shaped madeleine mould.
It makes 12 at once.
You may need to shake the tray to release the madeleines.
